I never pass up a dish with sea urchin. The sea urchin here, is served with a raw egg, wild salmon roe, onions, butternut squash puree, and toasted points. You mix up the ingredients and spread it on the toasted points and have yourself an awesome little bite. Check out his full scoop here.
