Chicken riggies was invented* upstate in Utica, NY. Chicken, rigatoni and peppers are the primary ingredients. It’s everything else that varies recipe by recipe.
So after reading over eight recipes, we made it using all the ingredients that were common denominators. The result? Apparently it wasn’t legit chicken riggies.
Here’s what we used:
- boneless/skinless chicken thighs
- red bell peppers
- hot cherry peppers
- dry sherry
- 28 oz can tomatoes
- heavy cream
Still stumped as to how this is deemed not real chicken riggies. Does anyone else have a version to share?
